Program overview

The Food and Nutrition Management diploma trains managers for food service operations in healthcare, long-term care and institutional settings — where nutrition, safety and cost control all carry regulatory weight.

Coursework covers nutrition science and nutritional requirements across the lifespan, therapeutic and modified diets for medical conditions, menu planning and nutritional analysis, food safety and HACCP systems, quantity food production and portion control, food service purchasing and inventory management, financial management and cost control, human resource management in food service, facility design and equipment, and regulatory standards for institutional food service.

Therapeutic diets are the specialised knowledge that makes this credential employable. Hospitals and long-term care homes must serve texture-modified, renal, diabetic and allergen-controlled diets safely and at scale, and managers who understand both the clinical requirement and the kitchen operation are genuinely scarce.

The work placement is a graded part of the program, so you finish with documented Canadian experience and a referee rather than only a transcript.

Humber Polytechnic — formerly Humber College — is Ontario’s largest public college and a Designated Learning Institution (DLI O19376943122). Application fee $100 CAD, plus an initial tuition deposit of $2,000 CAD — Humber will not request your Ontario Provincial Attestation Letter (PAL) until that deposit clears, so deposit timing drives your study-permit timeline.
