Program overview

The Culinary Management diploma is a two-year program combining professional cookery with the business skills required to run a kitchen profitably.

The culinary half covers foundational technique through advanced cookery: stocks and sauces, protein fabrication and cooking methods, international and contemporary cuisine, garde manger, baking and pastry, and plating and presentation. The management half covers food and labour cost control, menu engineering and pricing, purchasing and inventory systems, kitchen staffing and scheduling, food safety systems and HACCP, nutrition, and restaurant financial management. Humber operates student-run food service outlets where both halves are applied in live service.

Cost control is the content that determines careers in this industry. Restaurants fail on food and labour cost management far more often than on cooking, and chefs who can manage a P&L progress into executive and ownership roles while equally skilled cooks stay on the line.

The work placement is a graded part of the program, so you finish with documented Canadian experience and a referee rather than only a transcript.

Humber Polytechnic — formerly Humber College — is Ontario’s largest public college and a Designated Learning Institution (DLI O19376943122). The North campus in Etobicoke is its main site, running technology, engineering, health science, business and skilled trades programs in purpose-built labs and shops rather than lecture halls, with three intakes a year and the deepest employer network in the Greater Toronto Area.

Application fee $100 CAD, plus an initial tuition deposit of $2,000 CAD — Humber will not request your Ontario Provincial Attestation Letter (PAL) until that deposit clears, so deposit timing drives your study-permit timeline. Admissions run on a rolling basis and popular programs fill months ahead under Canada’s international seat caps.
