Program overview
The Hospitality – Hotel and Restaurant Operations Management diploma trains supervisors and managers for the accommodation and food service industry over two years.
Students cover front office and reservations systems, housekeeping and facilities operations, food and beverage service and cost control, menu engineering and purchasing, revenue and yield management, hospitality accounting and financial control, sales and marketing for hotels, human resource management in high-turnover environments, and health, safety and food handling certification. Humber operates working food service outlets on campus, so operational coursework runs in live service conditions rather than simulations.
Revenue management is the part worth paying attention to. Hospitality careers plateau quickly in operational roles but progress fast for people who can forecast demand, price inventory and defend a P&L — which is precisely what separates a supervisor from a general manager.
The work placement is a graded part of the program, so you finish with documented Canadian experience and a referee rather than only a transcript.
Humber Polytechnic — formerly Humber College — is Ontario’s largest public college and a Designated Learning Institution (DLI O19376943122).
