Program overview
Picture yourself working a busy pass on Main Street, inside the building that holds every culinary programme RRC Polytech runs. Culinary Skills is a one-year certificate, and at the Exchange District Campus it is taught in the Paterson GlobalFoods Institute, with January and May starts. Two terms in the teaching kitchens lead into a paid work term, so the certificate carries you from your first knife lesson to a real restaurant brigade inside twelve months.
Term 1 lays the groundwork. Culinary Principles and Culinary Foundations cover kitchen equipment, knife handling and core cooking methods, Cold Kitchen deals with cold preparations, and Protein Fundamentals 1 introduces protein cookery. The same term includes Communication for the Workplace, WHMIS, Smart Choices and the Certified Food Handler Training Program Level 1. Term 2 moves up a gear with Culinary Baking Fundamentals 1, Quick Service, where you cook for a student-run quick service restaurant using an electronic bill system, Communication Strategies, and Indigenous Teachings and Community Connections, which links cooking to Indigenous knowledge and local communities.
The Paterson GlobalFoods Institute at 504 Main Street is the Exchange District Campus home of RRC Polytech’s culinary programmes. It also contains Jane’s, the upscale restaurant run by Hospitality and Culinary Arts students, the Culinary Exchange food court and the Prairie Research Kitchen, which supports food processors through research and development. Culinary Skills students finish holding Food Handler Level 1, WHMIS and Smart Choices certifications, then spend Term 3 in Culinary Arts Field Placement 1, a paid work term with an industry employer. RRC Polytech notes that many students later take full-time jobs with their co-op employer.
Graduates of the Exchange District Culinary Skills intake step into roles such as line cook, prep cook, quick service cook, cold kitchen cook, institutional cook or cook apprentice. The programme suits a practical learner who wants a fast, kitchen-first route into Winnipeg’s restaurant district and is happy working evenings, weekends and busy service periods.

Admission requirements:
- Education: Grade 12.
- English: IELTS 6.0 (no band below 5.5), TOEFL iBT 78 (17 in each) or 4.0 on the 2026 scale, PTE 54 (50 in each) or Duolingo 115 (95 in each).
- PGWP: Yes (CIP 12.0500), about 1 year. Needs CLB 5.
- Before you apply: CAD 160 application fee. CAD 5,000 deposit within 14 days of the offer, refunded on a study permit refusal if claimed within 30 days. Manitoba PAL required.
